Red lentils are real all-rounders: they provide vegetable protein, are easy to digest and are full of nutrients – a real protein powerhouse!

Roasted beetroot and balsamic onions on celeriac puree

Beetroot is bursting with iron, vitamin B, potassium and folic acid and contains many valuable antioxidants that protect the cells. Eating beetroot regularly dilates the blood vessels, promotes blood circulation, ensures a better oxygen supply to the muscles and therefore makes us more efficient. So, go for the beetroot!

TOFU WITH LEEK VEGETABLES AND ROASTED CASHEWS

Whether it’s Indian, Thai or Vietnamese, Regine prefers to order dishes with lots of nuts, especially cashews. They are rich in healthy fats, magnesium and antioxidants, promote heart health and provide energy for the day.

SCHNITZEL AUS HAFERFLOCKEN MIT KARTOFFEL-KICHERERBSENKRÄUTER-SALAT

Vegan schnitzels are now a dime a dozen in the shops. As we’re not the biggest fans of ready-made products, we try to make a lot of things ourselves. The potato salad goes really well with it and is a real herb bomb. The chickpeas and oat flakes also provide a good portion of protein.

CAULIFLOWER ON BELUGA LENTILS WITH PESTO

Cauliflower is a nutrient-rich all-rounder vegetable with vitamins, fibre and cancer-inhibiting substances such as sulforaphane. The mild, nutty flavour of cauliflower harmonises perfectly with the earthy aroma of the protein-rich beluga lentils – the combination is not only delicious, but also packed with nutrients!

LEMONGRASS CURRY WITH BLACK CUMIN GREEN BEANS AND CRISPY SESAME TOFU

We love Thai dishes because they are so quick to prepare and come with lots of fresh vegetables. We also like the great exotic spices, especially lemongrass. All you need for this dish are various vegetables, ginger and coconut milk, but NO curry paste.

GYROS IN PITA BREAD WITH TZATZIKI

Original Greek gyros are traditionally always prepared with lots of fresh onions, which leaves some people with an unpleasant taste and bad breath afterwards. We have therefore come up with this variation with white cabbage.

Yeehaw! For the grand finale of vegan rock you, today we’re serving these powerful pulses in a smoky BBQ sauce that uses as few ingredients as possible. And beans, whether red, black or white, are true protein heroes and provide real Western power.
